SMOKED TROUT

WITH GULUPA VINAIGRETTE
For meat, fish or pork ribs!
INGREDIENTS
  • 1 lb of smoked trout.
  • 20 gr of chives.
  • 1 U cucumber.
  • 200 gr of Ocati gulupa.
  • 80 gr of honey.
  • 1 splash of olive oil.
  • coarse salt.
  • Pink pepper.
  • 1/2 cup of water.
PREPARATION
  • Cut the trout fillet into 2 MM slices.
  • Cook the gulupa juice with the honey, pink pepper and salt in a pan. Remove from heat.
  • Incorporate the oil in the form of a thread while whisking energetically.
  • Cut the cucumber into slices.
  • Brush with vinegar.
  • Decorate the plate.

Tip

You can get the right thickness in the cucumber with the help of a mandolin.
